For the Potatoes
- 1 lb small Yukon gold potatoes, quartered
- 1 tbsp avocado oil
- ¼ tsp salt, plus more after cooking
- ¼ tsp black pepper
For the Beef
- 1-2 tbsp avocado oil (for cooking)
- 1 lb lean ground beef (94% lean or 85–90% for richer bowl)
- ¼ – ½ large onion (red or yellow), finely diced
- ½ tsp salt (or to taste)
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika (optional)
For the Special Sauce
- ¼ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp ketchup
- 2 tsp yellow mustard
- 1 tbsp pickle juice
For the Bowl Assembly
- ½ red onion, thinly sliced (soaked in cold water 10–15 minutes)
- 2 Roma or plum tomatoes, seeded and cut into large chunks
- 1 cup pickle slices
- 1-2 hearts of romaine lettuce, chopped
- Optional: sesame seeds, cheese, avocado, bacon
Instructions
- Preheat Oven or Air Fryer: Preheat your oven or air fryer to 450°F to prepare for cooking the potatoes.
- Prep the Potatoes: Toss the quartered Yukon gold potatoes with avocado oil, salt, and black pepper until evenly coated.
- Cook Potatoes (Air Fryer): Place potatoes in a single layer in the air fryer basket and cook for 20–25 minutes, shaking halfway through, until they are golden and crispy.
- Cook Potatoes (Oven): Alternatively, spread the potatoes in a single layer on a parchment-lined baking sheet and roast for 30–40 minutes, flipping halfway, until golden and crisp.
- Season the Potatoes: Immediately after cooking, sprinkle additional salt onto the hot potatoes to enhance flavor.
- Cook Beef: Heat avocado oil in a large skillet over medium heat. Cook the diced red onion for 2 to 3 minutes until softened. Add the ground beef, breaking it apart with a spoon, and cook for 8 to 10 minutes until fully browned. In the last minute, stir in salt, garlic powder, onion powder, and smoked paprika to avoid burning the paprika.
- Make Special Sauce: Whisk together Greek yogurt, mayonnaise, ketchup, mustard, and pickle juice until smooth. Adjust consistency with water or extra pickle juice as desired. Taste and modify sauce seasoning to preference.
- Assemble Bowls: Divide chopped romaine lettuce among 4 bowls. Top each bowl with the cooked ground beef, crispy potatoes, tomatoes, sliced red onion, and pickle slices. Drizzle generously with the special sauce and sprinkle with sesame seeds or any optional toppings you like. Serve immediately for best freshness and flavor.
