Instructions

  1. Prepare the Peaches: Wash, peel, and slice the peaches. If using canned or frozen peaches, drain them well and proceed accordingly.
  2. Mix Dry Ingredients: In a medium saucepan, whisk together the brown sugar, granulated sugar, cornstarch, cinnamon, and salt until combined; a few small lumps are acceptable.
  3. Add Liquids and Cook: Pour in the cold water and lemon juice into the dry mixture. Cook over medium heat, whisking frequently, until the mixture thickens. This should take about 5-7 minutes. The sauce is ready when it leaves a clear streak when dragging a whisk or spoon through it.
