Peach Pie Filling Ingredients
- 5 cups peaches (About 5-6 peaches), peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup cornstarch
- 1/4 tsp cinnamon
- Dash of salt (optional)
- 1 cup cold water
- 1 1/2 tablespoons lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Peaches: Wash, peel, and slice the peaches. If using canned or frozen peaches, drain them well and proceed accordingly.
- Mix Dry Ingredients: In a medium saucepan, whisk together the brown sugar, granulated sugar, cornstarch, cinnamon, and salt until combined; a few small lumps are acceptable.
- Add Liquids and Cook: Pour in the cold water and lemon juice into the dry mixture. Cook over medium heat, whisking frequently, until the mixture thickens. This should take about 5-7 minutes. The sauce is ready when it leaves a clear streak when dragging a whisk or spoon through it.
- Add Peaches and Simmer: Stir in the sliced peaches and continue cooking and stirring for another 2-3 minutes over medium heat to blend flavors and soften the peaches.
- Finish with Vanilla: Remove the pan from heat and stir in the vanilla extract. Allow the filling to cool before using in your favorite pie or dessert.
Notes
- You can use fresh peaches for the best flavor, but canned or frozen peaches work well too. If using canned, drain completely; if frozen, thaw and drain excess liquid.
- The filling will thicken more as it cools, so do not overcook it on the stove.
- Adjust sugar amount based on the sweetness of your peaches to suit your taste.
- This filling can be made ahead and refrigerated for up to 3 days or frozen for longer storage.
