  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1 1/2 cups grated fresh mozzarella cheese, divided

Instructions

  1. Preheat and Prepare: Preheat your oven to 400ºF (204ºC). Grease an 8×8-inch baking dish or a small cast iron skillet lightly with non-stick cooking spray or oil to prevent sticking.
  2. Prepare the Feta Mixture: Place the block of feta cheese into a large bowl and use a fork to crush and crumble it into small pieces. Thoroughly squeeze the thawed spinach in a clean kitchen towel to remove as much excess water as possible, then add it to the bowl with the feta. To this, add the Greek yogurt, mayonnaise, grated garlic cloves, crushed red pepper flakes, roughly chopped pepperoncini peppers, and 1 cup of grated mozzarella cheese. Mix all the ingredients well until they’re fully combined.
  3. Bake the Dip: Transfer the spinach and feta mixture to the prepared baking dish and spread it evenly. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly on top. Bake in the oven for 26 to 30 minutes until the dip is bubbly and the edges are golden brown. For an extra browned crust, switch the oven to broil for the final 2 minutes, watching carefully to prevent burning.
  4. Serve Warm: Remove from the oven and serve the dip warm with your choice of pita chips, crostini, seeded crackers, or raw vegetable sticks for dipping and scooping.
