Ingredients
For the Honey-Garlic Sauce
- 1/3 cup honey
- 1/4 cup low sodium soy sauce
- 2 tbsp lemon juice
- Pinch of red chili flakes
For the Trout
- 3 tbsp olive oil (divided)
- 4 steelhead trout filets (6 oz. each)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 cloves garlic (minced)
- 1 lemon (thinly sliced)
Instructions
- Make the honey-garlic sauce: In a small saucepan, combine honey, low sodium soy sauce, lemon juice, and red chili flakes. Whisk together and bring the mixture to a boil over medium heat. Then reduce heat and simmer gently, uncovered, until the sauce thickens slightly, about 3-4 minutes. Set aside.
- Prepare the trout filets: Pat the steelhead trout filets dry with paper towels to ensure a good sear.
- Sear the trout: Heat 2 tablespoons of olive oil in a large skillet over medium heat. When the oil is hot but not smoking, place the trout filets skin side up in the skillet. Season generously with kosher salt and freshly ground black pepper.
- Cook the filets: Cook the filets until the flesh side is seared and nicely browned, about 2-3 minutes. Flip the filets over, add the remaining tablespoon of olive oil and the minced garlic to the skillet. Sauté the garlic for 30 seconds to 1 minute until fragrant.
- Glaze and finish cooking: Pour the prepared honey-garlic sauce over the trout and add the thinly sliced lemons to the skillet. Continue cooking, basting the filets frequently with the sauce, until the trout is cooked through and flakes easily with a fork. Be careful not to overcook to maintain tenderness.
- Serve: Spoon the remaining sauce and lemon slices over the trout filets. Serve hot over rice accompanied by steamed vegetables for a complete meal.
