Ingredients
Ground Beef Mixture
- 1 ½ pounds lean ground beef
- 1 small white onion, diced
- ½ tablespoon minced garlic
- 1 teaspoon fine sea salt
- ½ teaspoon black pepper
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried cilantro
- ¼ teaspoon ground cayenne pepper
- ¾ cup beef broth
Bowl Components
- 1 pound roasted sweet potatoes (air-fried recommended, such as Roots Farm Fresh Sweet Potato Croutons)
- 1 pound cooked broccoli florets
- 1 container (16 ounces) low-fat cottage cheese
- Mike’s Hot Honey, to drizzle
Instructions
- Cook the Ground Beef: In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is no longer pink and the onions are softened. Break the meat apart as it cooks. Drain any excess grease from the skillet.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Season the Meat: Add the sea salt, black pepper, chili powder, ground cumin, dried cilantro, cayenne pepper, and beef broth to the skillet. Stir all the ingredients together thoroughly.
- Simmer the Mixture: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 10 minutes. This helps develop flavor and reduces excess liquid.
- Assemble the Bowls: Divide the cooked taco meat evenly among six bowls, about 4 ounces per bowl. Add 3 ounces of roasted sweet potatoes next to the beef in each bowl.
- Add Vegetables and Cheese: Top each bowl with your desired amount of cooked broccoli florets and ¼ cup of low-fat cottage cheese.
- Finish with Hot Honey: Drizzle Mike’s Hot Honey over each bowl to taste, adding a sweet and spicy finish. Serve the bowls warm and enjoy!
Notes
- For best results, air fry the sweet potatoes to get a crispy texture.
- You can substitute beef broth with vegetable broth for a slightly different flavor profile.
- If you prefer extra heat, add more cayenne pepper or hot honey according to your taste.
- Leftovers store well in airtight containers in the refrigerator for up to 3 days.
- To keep it low carb, reduce or omit the sweet potatoes and add extra broccoli or other low-carb veggies.
