Ingredients
Salmon and Seasonings
- 2 lb side of salmon (skin on, center-cut)
- 4 Tbsp olive oil (divided)
- 1½ tsp Kosher salt
- 1 tsp garlic powder
- ¼ tsp freshly ground black pepper
- 1 medium lemon (zested, then cut into wedges for serving)
Optional Sauce
- Cilantro chimichurri (optional, but recommended for serving)
Instructions
- Preheat the oven: Place an oven rack at the lowest position and put a rimmed baking sheet on top. Preheat the oven to 500°F (260°C) and let the baking sheet heat for at least 5 minutes to ensure it’s very hot for the initial sear.
- Prepare the salmon: Pat the salmon dry with paper towels. Place it on a sheet of heavy duty aluminum foil that has been coated with 2 Tbsp olive oil or nonstick spray, ensuring the foil extends several inches beyond the fish. Drizzle the salmon with the remaining 2 Tbsp olive oil. Season evenly with 1½ tsp Kosher salt, 1 tsp garlic powder, and ¼ tsp freshly ground black pepper. Finish by zesting the lemon over the top for bright, fresh flavor.
- Roast the salmon: Carefully remove the hot baking sheet from the oven and place the foil with the salmon directly on it. Immediately reduce the oven temperature to 275°F (135°C) and roast the salmon for 14-18 minutes depending on thickness. The salmon should reach an internal temperature of about 120°F (49°C) for tender, slightly flaky doneness. The fish will continue cooking slightly after removal.
- Garnish and serve: Remove the salmon from the oven and serve immediately with lemon wedges. For added flavor, spoon cilantro chimichurri over the top or serve it on the side as a vibrant, herbaceous accompaniment.
