Special Sauce

Instructions
- Saute Ground Beef and Onion: Turn your Instant Pot to the “SAUTE” function and add a drizzle of olive oil to the inner pot. Add the ground beef, diced onion, seasoning salt, ground black pepper, and garlic powder to the pot. Use a hamburger chopper or spatula to break up the ground beef as it cooks until it is mostly browned.
- Add Water and De-glaze: Pour 3/4 cup water into the pot and use a wooden spoon or spatula to scrape the bottom, lifting any browned bits to prevent burning or sticking.
- Add Rice and Toppings: Sprinkle one cup of long grain brown rice evenly over the beef mixture but do not stir. Next, top the rice with Worcestershire sauce, Dijon mustard, and the two cans of diced tomatoes, ensuring the rice is fully covered.
- Pressure Cook: Secure the Instant Pot lid and turn the knob to seal. Set to cook on high pressure for 10 minutes. After cooking, allow a natural pressure release for 10 minutes, then carefully release any remaining pressure by turning the valve to vent.
- Mix and Add Cheese: Open the lid and use a fork to gently mix the beef and rice mixture. Sprinkle the shredded cheddar cheese evenly on top, then close the lid again and let sit for 2 to 3 minutes on the “Keep Warm” setting to melt the cheese.
- Prepare Special Sauce: While the casserole cooks, mix mayonnaise, Greek yogurt (or sour cream), ketchup, and a dash of salt and pepper in a small bowl to create the special sauce.
- Serve: Serve the cheesy beef and rice casserole hot with the special sauce and chopped pickles on the side. Enjoy your comforting and flavorful meal!
