  1. Prepare the strawberries: Slice the fresh strawberries and place them into the inner pot of the Instant Pot. Add the granulated sugar and fresh lemon juice. Mix everything well to combine and let the mixture sit for 30 minutes to macerate, allowing the strawberries to release their juices.
  2. Initial mixture check: After 30 minutes, the strawberry mixture will become saucy and produce plenty of liquid, which ensures you can pressure cook without adding any water.
  3. Pressure cook the jam: Seal the Instant Pot lid and set it to high pressure for just 1 minute. After the cooking time, allow the pressure to come down naturally by leaving the Instant Pot untouched for about 20 minutes. This natural release ensures gradual cooking and flavor development.
  4. Open and assess consistency: Once the pressure pin drops, carefully open the Instant Pot lid. The jam will appear very liquid-y at this stage, but this is expected and normal.
  5. Thicken the jam: Press the ‘CANCEL’ button to stop pressure cooking, then switch the Instant Pot to ‘SAUTE’ mode. Cook the jam on sauté, stirring frequently, for 15-20 minutes until it thickens to your desired consistency.
  6. Cool and store: Pour the thickened jam into a clean jar. Allow it to cool completely at room temperature. The jam will continue to thicken as it cools, ensuring a perfect spreadable texture.
