Instructions

  1. Prepare the pickling liquid: In a bowl, combine vinegar, hot water, sugar, coriander seeds, minced garlic, and salt. Stir thoroughly until the sugar dissolves completely. To speed up the process, gently heat the mixture in a saucepan over medium-low heat, stirring occasionally, but do not allow it to boil. Let the mixture cool completely before using.
  2. Slice the cucumbers: Cut the cucumbers into wedges that fit comfortably inside your pickling jars.
  3. Layer jalapenos and basil: Place some jalapeno slices and fresh basil leaves at the bottom of each jar to add initial flavor layers.
  4. Fill jars with cucumbers: Pack the cucumber wedges tightly on top of the jalapenos and basil in each jar.
