Cream Cheese Glaze
- 1/4 cup whipped cream cheese
- 1/4 cup Besti Monk Fruit and Allulose Powdered Sweetener
- 2 tbsp heavy cream
- 1/4 tsp real vanilla extract
Instructions
- Preheat Waffle Maker: Preheat your mini waffle maker to prepare it for cooking the batter evenly and to ensure crisp waffles.
- Blend Ingredients: Combine all waffle ingredients (coconut flour, eggs, cream cheese, butter, heavy cream, vanilla extract, red food coloring, sweetener, cocoa powder, baking powder, salt, and xanthan gum) in a blender and blend until the batter is smooth and well combined.
- Rest Batter: Allow the batter to rest for a few minutes so it can thicken up slightly, which will help the waffles hold their shape better during cooking.
- Cook Waffles: Scoop a little less than 1/4 cup of batter into the preheated waffle maker. Spread it evenly with a spatula or spoon to cover the waffle surface, then close the lid.
- Cook Until Done: Cook according to your waffle maker’s instructions, usually about 4 to 5 minutes, or until steam stops escaping from the sides indicating the waffle is cooked through.
- Remove and Cool: Carefully remove the waffle from the iron, noting they are fragile while hot, then transfer it to a wire cooling rack to cool slightly without becoming soggy.
- Repeat: Repeat the cooking process with the remaining batter until all waffles are cooked.
- Prepare Glaze: In a small bowl, mix whipped cream cheese, powdered sweetener, heavy cream, and vanilla extract until smooth and creamy to make the cream cheese glaze.
- Serve: Place the red velvet waffles on a serving plate, drizzle generously with the cream cheese glaze and optionally warm keto maple syrup for extra sweetness and serve immediately.
