Ingredients

Graham Cracker Crust

  • 12 Graham Cracker Sheets

Key Lime Pie Filling

  • 2 (14-ounce) cans Sweetened Condensed Milk
  • 2 large Egg Yolks
  • 1/2 cup Sour Cream (preferably full-fat)
  • 3/4 cup Key Lime Juice (or regular lime juice)
  • Zest from 1 Lime

Topping

  • 1 1/2 cups Heavy Cream
  • 1/3 cup Powdered Sugar

Instructions

  1. Prepare Graham Cracker Crust: Preheat the oven to 350 degrees F. In a food processor, pulse the graham crackers until fine crumbs form. Stir in the melted butter and pulse again to combine. If you don’t have a processor, crush the graham crackers finely in a sealed bag with a rolling pin, then mix in the melted butter.
  2. Form and Bake Crust: Press the graham cracker mixture firmly into a 9-inch pie pan using the back of a measuring cup or a small glass. Bake in the preheated oven for 8 minutes, then set aside to cool.
  3. Make Pie Filling: In a medium bowl, whisk together the sweetened condensed milk, egg yolks, lime juice, lime zest, and sour cream until smooth. Pour this filling over the cooled graham cracker crust.
  4. Bake Pie Filling: Bake the pie with the filling at 350 degrees F for 10 minutes to set the filling.
  5. Chill the Pie: Refrigerate the baked pie for at least 4 hours to allow it to fully set and chill before serving.
