Graham Cracker Crust
- 12 Graham Cracker Sheets
- 6 Tablespoons Salted Butter (melted)
Key Lime Pie Filling
- 2 (14-ounce) cans Sweetened Condensed Milk
- 2 large Egg Yolks
- 1/2 cup Sour Cream (preferably full-fat)
- 3/4 cup Key Lime Juice (or regular lime juice)
- Zest from 1 Lime
Topping
- 1 1/2 cups Heavy Cream
- 1/3 cup Powdered Sugar
Instructions
- Prepare Graham Cracker Crust: Preheat the oven to 350 degrees F. In a food processor, pulse the graham crackers until fine crumbs form. Stir in the melted butter and pulse again to combine. If you don’t have a processor, crush the graham crackers finely in a sealed bag with a rolling pin, then mix in the melted butter.
- Form and Bake Crust: Press the graham cracker mixture firmly into a 9-inch pie pan using the back of a measuring cup or a small glass. Bake in the preheated oven for 8 minutes, then set aside to cool.
- Make Pie Filling: In a medium bowl, whisk together the sweetened condensed milk, egg yolks, lime juice, lime zest, and sour cream until smooth. Pour this filling over the cooled graham cracker crust.
- Bake Pie Filling: Bake the pie with the filling at 350 degrees F for 10 minutes to set the filling.
- Chill the Pie: Refrigerate the baked pie for at least 4 hours to allow it to fully set and chill before serving.
- Prepare Whipped Cream Topping: In a large bowl, whip the heavy cream until soft peaks form. Gently fold in the powdered sugar until combined.
- Serve: Add a dollop of whipped cream to each slice or pipe it decoratively over the entire pie before serving.
Notes
- For best flavor, use fresh Key lime juice; however, regular lime juice works as a substitute.
- Allowing the pie to chill for at least 4 hours is crucial for proper setting and texture.
- The graham cracker crust can be pressed along the sides of the pan for a thicker crust if desired.
- To make ahead, prepare the pie a day before serving and keep refrigerated, topping with whipped cream just before serving.
