- 12 lasagna noodles (cooked according to package instructions)
Cheese Mixture
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 large egg
- 2 teaspoons garlic paste (or minced garlic)
- 2 tablespoons chopped fresh basil (plus more for garnish)
- 1 teaspoon Italian seasonings
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Meat (Optional)
- 1 cup cooked and crumbled ground beef or Italian sausage
Sauce and Topping
- 2 cups marinara sauce (divided)
- ½ cup grated mozzarella cheese (for topping)
Instructions
- Preheat Oven: Preheat your oven to 375°F and prepare a 9×13-inch baking pan by setting it aside.
- Cook Noodles: Boil the 12 lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.
- Mix Cheese Filling: In a bowl, combine ricotta, shredded mozzarella, Parmesan, egg, garlic paste, chopped basil, Italian seasonings, salt, and black pepper. Stir until fully combined.
- Add Meat (Optional): If using, fold the cooked and crumbled ground beef or Italian sausage into the cheese mixture until evenly distributed.
- Prepare Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of the baking dish.
- Assemble Roll Ups: Spread 2 to 3 tablespoons of the cheese mixture evenly over each noodle. Starting at one end, roll up the noodle tightly.
- Arrange Rolls: Place each roll seam-side down in the prepared baking dish. Repeat until all noodles are rolled and placed.
- Add Sauce and Cheese: Pour the remaining 1 cup marinara sauce over the top of the roll ups, then sprinkle with ½ cup grated mozzarella cheese evenly.
- Bake Covered: Cover the baking dish with aluminum foil and bake for 25 minutes in the preheated oven.
- Bake Uncovered: Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and slightly golden.
- Rest and Serve: Allow the lasagna roll ups to rest for a few minutes before serving. Garnish with additional fresh basil if desired.
Notes
- For a vegetarian version, omit the meat or substitute with sautéed vegetables.
- Make sure noodles are cooled and dried before filling to prevent tearing.
- Use fresh herbs for the best flavor, but dried basil can also be used if needed.
- Lasagna roll ups can be made ahead and refrigerated before baking; just add extra baking time if cold from fridge.
- Make sure to cover the dish with foil initially to prevent the cheese from drying out.
