These Lavender Lemonade Popsicles are a refreshing and floral twist on classic lemonade, perfect for hot summer days. Made with culinary lavender, fresh lemon juice, and just the right amount of sweetness, these popsicles offer a delicate balance of citrus and aromatic flavors. They are easy to prepare, requiring a simple steeping process followed by freezing, making them a delightful homemade treat for all ages.

  • Total Time: 6 hours 15 minutes
  • Yield: 10 servings

Ingredients

Ingredients

  • 4 cups water
  • 1/4 cup culinary lavender
  • 1/3 cup sugar
  • Juice of 2 large lemons

Instructions

  1. Boil and Steep Lavender: Bring 4 cups of water to a boil in a small pan. Place 1/4 cup of culinary lavender into 2 paper tea filters or a fine sieve, and steep in the boiling water for 10 minutes to extract the floral flavors.
  2. Juice the Lemons: While the lavender steeps, juice 2 large lemons to prepare fresh lemon juice for the popsicles.
  3. Mix Lemonade Base: After the lavender has finished steeping, remove the lavender from the water. Stir in 1/3 cup of sugar and the freshly squeezed lemon juice until the sugar is fully dissolved, creating a sweet and fragrant lemonade base.
  4. Fill Popsicle Molds: Pour the lavender lemonade mixture into popsicle molds, leaving a small gap at the top of each compartment. Place the molds in the freezer for 2-3 hours before inserting the popsicle sticks, especially if using wooden sticks, to ensure they stand upright.
  5. Freeze Completely: After inserting the sticks, freeze the popsicles for at least another 4 hours or preferably overnight until fully frozen solid.
  6. Remove and Serve: To easily release the popsicles, fill a sink or bowl with hot water and briefly dip the molds (about 10 seconds). This loosens the edges, allowing the popsicles to slide out effortlessly. Store the popsicles in a large zipper bag rather than leaving them in the mold to maintain texture and prevent freezer burn.

Notes

  • Use culinary-grade lavender to ensure the flavor is safe and pleasant for eating.
  • If you prefer a less sweet popsicle, reduce the sugar amount to taste.
  • For a more vibrant color and flavor, consider adding a few drops of natural purple food coloring or a splash of blueberry juice.
  • You can substitute honey or agave syrup for sugar if desired, but adjust quantities based on sweetness.
  • Letting the popsicle sticks set partway before inserting ensures sticks stay upright and centered.
