- zest of 1-2 large lemons
- splash pure vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix Dry Ingredients: In a large bowl, combine the gluten-free oats, roughly chopped almonds, and chia seeds. Stir the mixture well to ensure the ingredients are evenly distributed.
- Prepare Wet Mixture: In a smaller bowl or a jar, mix together the extra-virgin olive oil, honey, lemon zest, vanilla extract, and a pinch of salt. Stir well until the mixture is uniform and aromatic.
- Combine Ingredients: Pour the wet mixture over the dry oat and nut mixture. Mix thoroughly so the oats and nuts are evenly coated with the lemony honey glaze.
- Arrange on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Use a spatula or your hands to pat it down into one even layer for consistent baking.
