Ingredients
For the Chicken:
- ¼ cup all-purpose flour
- 3 tablespoons lemon pepper seasoning (divided)
- 2 boneless, skinless chicken breasts
- 4 tablespoons butter (divided)
For the Sauce:
- 3 cloves fresh garlic (minced)
- ¼ cup chicken broth
- 2 tablespoons fresh lemon juice
Instructions
- Prepare the Chicken: Slice two large chicken breasts in half horizontally to create 4 thinner pieces. This helps them cook evenly and quickly.
- Coat the Chicken: In a shallow bowl, mix the flour with 2 tablespoons of lemon pepper seasoning. Dredge each chicken piece thoroughly in this seasoned flour mixture, ensuring complete coverage.
- Heat the Butter: Place a large skillet on the stove over medium-high heat and melt 1 tablespoon of butter.
- Cook the Chicken: Once the skillet is hot and butter melted, add the coated chicken pieces. Cook each side for 4-5 minutes or until the internal temperature reaches 165°F. Remove the chicken and set aside on a clean plate.
- Sauté Garlic: Add the remaining 3 tablespoons of butter to the skillet. When melted, add the minced garlic and sauté for 30-60 seconds until fragrant but not browned.
- Make the Sauce: Pour in the chicken broth, lemon juice, and remaining 1 tablespoon of lemon pepper seasoning. Stir well, scraping up the browned bits from the skillet bottom to incorporate flavor.
- Simmer the Sauce: Let the sauce simmer gently for 3-4 minutes to reduce slightly and meld flavors.
- Finish Cooking: Return the chicken to the skillet and cook for an additional 1-2 minutes per side, allowing the chicken to absorb the sauce flavors.
- Serve: Remove from heat and optionally garnish with freshly chopped parsley and lemon zest for a bright finishing touch.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F for safety.
- You can substitute lemon pepper seasoning with freshly ground black pepper and lemon zest if unavailable.
- Use fresh lemon juice for the best bright flavor; bottled lemon juice can be more acidic or less vibrant.
- This recipe can be served over rice, pasta, or alongside steamed vegetables for a complete meal.
- Leftovers keep well in the refrigerator for up to 3 days.
