Instructions

  1. Preheat and Season: Preheat your oven to 425°F (220°C). Place the potato chunks onto a rimmed baking sheet. Drizzle with olive oil and sprinkle with dried oregano, salt, and pepper. Toss the potatoes well with your hands ensuring each piece is evenly coated with oil and seasonings.
  2. First Roasting: Roast the potatoes in the preheated oven for 15 minutes. This will begin to crisp the edges while cooking the interior.
  3. Toss and Continue Roasting: Remove the tray from the oven and use a spatula to gently toss the potatoes to ensure even cooking. Return them to the oven and roast for another 10 minutes.
  4. Add Garlic and Finish Roasting: After 10 minutes, remove the tray once again and mix in the minced garlic evenly among the potatoes. Roast for an additional 3-5 minutes or until the potatoes are tender and garlic is fragrant but not burned.
  5. Add Final Touches and Serve: Remove the potatoes from the oven and immediately squeeze fresh lemon juice over them. Sprinkle lemon zest, chopped parsley, dill, and crumbled feta cheese on top. For an optional finishing touch, add a sprinkle of flaky sea salt. Serve the potatoes directly from the baking sheet or transfer them to a serving dish.
