Instructions
- Combine Ingredients: Place the green lentils, vegetable broth, green chiles, tomato sauce, and taco seasoning into the Instant Pot. Mix thoroughly to combine all ingredients evenly.
- Set Instant Pot: Secure the lid on the Instant Pot, ensure the vent is sealed, then set the pot to manual mode on high pressure. Program the timer for 15 minutes. Note that it will take approximately 5 to 10 minutes for the pressure to build before the cooking timer starts counting down.
- Release Pressure: When the timer goes off, carefully open the vent to perform a quick release of the steam. Once the pressure has been fully released and the Instant Pot unlocks, open the lid and stir the lentil mixture thoroughly.
- Rest and Serve: Allow the cooked lentils to sit for 5 to 10 minutes after cooking to thicken and absorb flavors. Then serve the lentil mixture with your favorite taco toppings such as lettuce, cheese, salsa, avocado, or sour cream.
Notes
- You can adjust the level of spiciness by choosing mild or hot green chiles or altering the amount of taco seasoning.
- If you prefer a thicker filling, let the lentils sit longer after cooking to absorb more liquid.
