  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Carrots

  • 1 lb. carrots, washed & peeled

Glaze

  • 2 Tbsp maple syrup, divided
  • 1 Tbsp whole grain mustard, divided
  • 1 Tbsp olive oil
  • 2 tsp Dijon mustard, divided
  • 2 garlic cloves, minced
  • ½ tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste

Garnish

  • Fresh thyme sprigs
  • Goat cheese, crumbled (optional)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and line a baking pan with parchment paper to prevent sticking and aid in easy cleanup.
  2. Prepare the carrots: Rinse and dry the carrots thoroughly. Peel them and trim the ends. Slice the carrots diagonally into approximately 1½-inch pieces. If some pieces are very large, cut them lengthwise in half to ensure even roasting. Place all carrot pieces in a large mixing bowl.
  3. Make the glaze and toss: In a small bowl, whisk together 1 tablespoon maple syrup, ½ tablespoon whole grain mustard, 1 teaspoon Dijon mustard, and olive oil. Pour this mixture over the carrots. Add the minced garlic, dried thyme, salt, and cracked black pepper. Toss everything together until the carrots are evenly coated with the glaze and seasonings.
  4. Roast the carrots: Use a slotted spoon to transfer the glazed carrots to the prepared baking pan, arranging them in a single even layer. Reserve the remaining glaze in the bowl for later use. Roast the carrots in the oven for 20-25 minutes, or until tender. Larger pieces may require an extra 5 minutes.
  5. Baste during roasting: About 5-10 minutes before the carrots finish cooking, brush the reserved glaze over the carrots to add extra flavor and shine. Continue roasting until carrots are fully tender and caramelized.
  6. Prepare the finishing sauce: While the carrots finish roasting, whisk together the remaining 1 tablespoon maple syrup, ½ tablespoon whole grain mustard, and 1 teaspoon Dijon mustard. Once the carrots are out of the oven, drizzle this sauce over them and toss gently to coat.
  7. Serve: Transfer the glazed carrots to a serving dish. Garnish with fresh thyme sprigs and sprinkle with crumbled goat cheese if desired. Serve warm and enjoy this deliciously sweet and tangy side dish!

Notes

  • For a vegan option, omit the goat cheese or substitute with a plant-based cheese alternative.
  • If carrots are very thick, slice them into thinner pieces to ensure even cooking.
  • You can substitute fresh thyme for dried thyme if preferred; use about 1 tablespoon fresh thyme leaves.
  • Leftover glazed carrots can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
