Ingredients
Halibut Fillets
- 1 pound fresh halibut, cut into 2-3 fillets
Topping Mixture
- 3 tablespoons sun-dried tomatoes, chopped
- 3 tablespoons mayonnaise
- 2 garlic cloves, minced
- 1/4 teaspoon dried oregano
- kosher salt and freshly cracked black pepper, to taste
Garnish
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat and Prepare Topping. Preheat your oven to 425°F (220°C). In a bowl, combine the chopped sun-dried tomatoes, mayonnaise, minced garlic, and dried oregano. Mix well to create a flavorful spread for the fish.
- Prepare the Halibut. Line a baking sheet with parchment paper. Place the halibut fillets skin side down on the parchment. Lightly sprinkle each fillet with kosher salt and freshly cracked black pepper to enhance the flavor. Then, evenly spread the sun-dried tomato and mayonnaise mixture over the top of each fillet.
- Bake the Fish. Place the baking sheet in the preheated oven and bake the halibut for 15-17 minutes. Cooking time may vary depending on the thickness of the fillets; for fillets about 1 1/2 inches thick, 15 minutes is sufficient. The fish should be opaque and flake easily with a fork when done.
- Garnish and Serve. Remove the baked halibut from the oven. Sprinkle fresh chopped basil over the top for a fragrant, fresh finish. Serve immediately and enjoy your healthy Mediterranean-inspired meal.
