Ingredients

For the Kabobs:

  • 1 1/2 pound salmon fillet, cubed into 1-inch to 1 1/2-inch pieces
  • 1 zucchini, sliced into rounds
  • 1 small red onion, cut into large pieces (about 1-inch)
  • Kosher salt, to taste
  • Black pepper, to taste

For the Marinade:

  • 1/3 cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 3 garlic cloves, minced
  • 2 teaspoons chopped fresh thyme leaves
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon Aleppo pepper (or 1/2 teaspoon chili flakes)
  • 1/2 teaspoon ground coriander

Instructions

  1. Marinate the salmon: In a small bowl, whisk together olive oil, lemon zest and juice, minced garlic, fresh thyme, dried oregano, ground cumin, Aleppo pepper, and ground coriander to create the marinade. Place the cubed salmon, zucchini rounds, and onion pieces into a large bowl. Season generously with kosher salt and black pepper. Toss the ingredients to distribute the seasoning evenly. Pour the marinade over the salmon and vegetables and toss gently to coat everything well. Let the mixture marinate at room temperature for 15 to 20 minutes or refrigerate for up to 1 hour for more flavor infusion.
  2. Prepare and grill the kabobs: Thread the marinated salmon cubes, zucchini slices, and onion chunks alternately onto skewers. Preheat the grill to high heat and oil the grill grates to prevent sticking. Place the skewers on the grill, cover with the lid, and cook for 6 to 8 minutes total, turning gently once halfway through cooking using tongs. The salmon is done when it turns opaque and flakes easily. Remove the kabobs from grill and serve immediately for the best flavor.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  • For indoor cooking, use a grill pan over medium-high heat, lightly oiled, and cook the skewers similarly for 6 to 8 minutes, turning once halfway through.
