Instructions

  1. Prepare the Rice Base: In a large skillet, cook the cauliflower rice according to your preference or cook white or brown rice using your favorite method, then stir in the drained diced tomatoes with green chilies. Transfer this mixture evenly to the bottom of a large casserole dish and set aside.
  2. Sauté Vegetables: Wipe down the skillet to remove any cauliflower residues, then heat 1 tablespoon of avocado oil over medium heat. Add diced bell peppers and onions, and sauté for 10 to 15 minutes until softened and starting to brown. Season with sea salt and black pepper. Spread the sautéed vegetables evenly over the rice layer in the casserole dish, then spread sour cream evenly on top with a spatula. Set aside.
