- Preheat the oven: Set your oven to 350°F (180°C) to prepare for roasting the peppers.
- Prepare the peppers: Cut off the top caps of each mini sweet pepper. Remove all seeds and membranes carefully to keep the peppers whole and ready for stuffing.
- Cut the Brie: Slice the Brie cheese into small pieces that fit comfortably inside each pepper cavity. You can leave the rind on for added flavor or trim it off for a softer melt.
- Stuff the peppers: Fill each pepper cavity with a piece of Brie, pressing gently so the cheese fills the space without breaking the pepper.
- Arrange in baking dish: Place the stuffed peppers upright in a round earthenware baking dish, positioning them snugly so they support each other and remain upright with the open side facing up.
- Roast the peppers: Place the dish in the oven and roast for 15 to 20 minutes, or until the peppers are tender and the Brie has fully melted and become soft.
Notes
- For a creamier texture, removing the rind from the Brie before stuffing is recommended, but it is optional.
- Ensure the peppers are placed snugly together in the baking dish to prevent tipping over during roasting.
