Ingredients
Peanut Butter Layer
- 3/4 cup natural peanut butter (warmed and melty)
- 1/2 cup vanilla whey protein powder (2 scoops)
- 1/4 cup stevia (or sugar-free maple syrup)
White Chocolate Layer
- 1/2 cup sugar free white chocolate chips
- 1/2 tsp coconut oil
Toppings
- 1/2 cup Cadbury Mini Eggs (or any brand)
Instructions
- Prepare the Peanut Butter Layer: Slightly melt the natural peanut butter in the microwave until it’s warm and easy to mix. In a large bowl, combine the melted peanut butter with vanilla whey protein powder and the sweetener (stevia or sugar-free maple syrup). Stir until the mixture is smooth and well combined.
- Set the Base: Line an 8×8 inch baking dish or tray with wax paper. Pour the peanut butter protein mixture into the dish and spread it evenly with a spatula to form the base layer.
- Melt the White Chocolate Layer: In either the microwave or on the stovetop, melt the sugar-free white chocolate chips together with the coconut oil in 30-second increments, stirring in between to ensure a smooth consistency.
- Apply White Chocolate Layer: Pour the melted white chocolate mixture over the peanut butter base and gently spread it evenly using a spatula to cover the entire surface.
- Prepare the Toppings: Place the Cadbury Mini Eggs in a ziplock bag and crush them into various sized pieces for texture variety. Sprinkle the crushed mini eggs evenly on top of the white chocolate layer.
- Freeze and Serve: Place the baking dish in the freezer and chill for at least one hour to allow the bars to set completely. Once firm, cut into bars or slices. Keep the bars refrigerated and enjoy them as a nutritious snack or dessert.
Notes
- Use natural peanut butter without added sugar or oils for the best flavor and nutrition.
- Stevia or sugar-free maple syrup works well to keep these bars low in sugar; adjust sweetness according to taste.
- Ensure the peanut butter is warm to avoid clumps when mixing with protein powder.
- Crushing the mini eggs into varied sizes adds a pleasant texture contrast.
- Store the bars in the refrigerator for up to one week or freeze for longer storage.
