Instructions
- Prepare the bowl and cereal: Grease a large mixing bowl with butter or cooking spray to prevent sticking, then add the Rice Krispies cereal and set aside.
- Melt the butter: In a medium-large saucepan, melt the butter over low heat to ensure it doesn’t burn and provides a smooth base for the marshmallows.
- Add marshmallows: Stir in the marshmallows, coating them evenly with the melted butter to help them melt uniformly.
- Heat until mostly melted: Continue heating the mixture until the marshmallows are about three-quarters melted. Then remove the pan from the heat and stir until the mixture is completely smooth and glossy.
- Add flavor and color: Stir in the peppermint extract and green food coloring to infuse a minty flavor and festive color throughout the mixture.
- Combine with cereal: Pour the marshmallow mixture over the Rice Krispies cereal in the prepared bowl and toss gently but thoroughly to coat all the cereal evenly.
- Cool slightly: Let the mixture cool for 5-8 minutes until it’s cool enough to handle but still pliable.
- Fold in chocolate chips: Fold in most of the mini chocolate chips, reserving about 3 tablespoons to sprinkle on top later.
- Press into pan: Spread the coated cereal mixture evenly into a buttered 8-inch square pan, pressing down gently to compact the treats without crushing them.
- Add topping: Sprinkle the reserved chocolate chips over the top and press them gently into the surface to help them stick.
- Cool completely: Allow the treats to cool at room temperature for about 30 minutes until set before slicing into 16 squares for serving.
Notes
- Use salted butter to enhance flavor, but unsalted butter can be substituted if preferred; adjust salt accordingly.
- For extra mint flavor, add a little more peppermint extract incrementally but don’t overdo as it can become overpowering.
- Green food coloring can be adjusted based on your preferred shade or omitted if not desired.
