Miso Butter Roasted Cabbage Wedges offer a deliciously savory and slightly crispy vegetable side dish. Tender cabbage wedges are brushed with a flavorful miso butter mixture, roasted to golden perfection, then topped with garlicky toasted Panko breadcrumbs for added texture and flavor.

  • Total Time: 40-45 minutes
  • Yield: 4 servings

Ingredients

Miso Butter Cabbage

  • 3 tbsp butter, divided
  • 1 tbsp miso paste
  • 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)

Breadcrumb Topping

  • ¼ cup Panko breadcrumbs
  • ¼ tsp garlic powder
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (400°F) to ensure it’s ready for roasting the cabbage.
  2. Prepare and Butter the Cabbage: Cut the sweetheart cabbage into four even wedges. Soften 2 tablespoons of the butter and mix thoroughly with 1 tablespoon of miso paste. Brush this miso butter all over each cabbage wedge, including the base, to infuse flavor.
  3. Roast the Cabbage: Arrange the coated cabbage wedges on a baking sheet. Roast in the preheated oven for 30-35 minutes, until the edges are charred and crispy while the inside remains tender yet slightly firm.
  4. Make the Garlic Breadcrumbs: While the cabbage roasts, melt the remaining 1 tablespoon of butter in a pan over medium heat. Add the Panko breadcrumbs and garlic powder, stirring constantly to toast the breadcrumbs evenly without burning until they turn golden brown. Remove immediately from heat.
  5. Serve and Garnish: Once the cabbage is roasted, sprinkle the toasted garlic breadcrumbs over the wedges. Add chopped parsley for a fresh, herbal touch if desired. Serve immediately while warm.

Notes

  • For an extra punch, try using white or red miso paste depending on your flavor preference.
  • Be sure to watch the breadcrumbs closely while toasting to prevent burning.
  • Sweetheart cabbage can be substituted with pointed cabbage or Napa cabbage if unavailable.
  • This dish pairs wonderfully with grilled meats or can be served as a delightful vegetarian side.
