Ingredients
Graham Cracker Crust
- 2 1/2 cups Graham cracker crumbs (2 packets)
- 2 TBSP Light brown sugar (packed)
- 3/4 cup Unsalted butter (melted)
Caramel Pie Filling
- 1 1/2 cups Heavy cream (cold)
- 1/4 cup Powdered sugar
- 1 tsp Pure vanilla extract
- 16 oz Cream cheese (room temperature)
- 1 cup Powdered sugar
- 1/4 cup Caramel sauce
- 1 tsp Pure vanilla extract
Apple Pie Topping
- 5 Gala apples (peeled and diced)
- 6 TBSP Unsalted butter
- 2/3 cup Light brown sugar (packed)
- 1 TBSP Cornstarch
- 2 TBSP Water
- 1 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
Instructions
- Prepare the Graham Cracker Crust: Spray a 9-inch springform pan with nonstick baking spray. If you plan on removing the pie from the pan, place a parchment paper circle on the bottom and spray again; if not, parchment is not necessary.
- Mix Crust Ingredients: Using a food processor, blend the graham crackers into fine crumbs. In a small bowl, combine the crumbs, light brown sugar, and melted butter, mixing well with a fork.
- Press Crust Into Pan: Pour the crumb mixture into the prepared pan. Use your hands to press the crust halfway up the sides and an inverted measuring cup to compact the bottom evenly. Freeze the crust while preparing the filling.
- Beat Whipped Cream: In a metal mixing bowl with a whisk attachment, beat the cold heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form. Set aside.
- Prepare Cream Cheese Mixture: In another bowl, beat the cream cheese and powdered sugar on high speed for 2 minutes until creamy and smooth. Add caramel sauce and vanilla extract and mix on medium speed until fully combined.
- Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, careful not to deflate the whipped cream. Spread this mixture evenly over the chilled graham cracker crust using an offset icing spatula.
- Chill the Pie: Cover the pie and chill in the refrigerator for at least 6 hours or overnight to set properly.
- Prepare Apple Pie Filling: On the day of serving, peel and dice the apples into 1/2-inch cubes. In a large sauté pan over medium heat, melt the butter. Add diced apples, light brown sugar, cornstarch, water, cinnamon, and nutmeg.
- Cook Apple Filling: Cook the apple mixture, stirring occasionally, until apples are softened and the sauce has thickened, about 5-10 minutes. Remove from heat and let it cool to room temperature, then cover and refrigerate.
- Assemble the Pie: The next day, remove the springform pan carefully, including the parchment paper. Warm the apple filling in the microwave for about 45 seconds to slightly heat it. Spread the warm apple topping evenly over the chilled caramel cream pie.
- Serve: Slice and serve the pie immediately for best texture and flavor.
Notes
- Use a springform pan for easy removal of the pie.
- Make sure the heavy cream is very cold for best whipping results.
- The pie needs to chill for at least 6 hours or overnight for proper setting.
- Warm the apple topping slightly before spreading to enhance flavor and ease of spreading.
- You can prepare the apple topping a day in advance and store it refrigerated.
- Gala apples work well, but other sweet apples like Honeycrisp or Fuji can be used.
