Ingredients
Crust
- 1 cup graham cracker crumbs (store-bought or homemade)
- 1/4 cup light brown sugar
- 4 tbsp salted butter (melted)
Mousse Filling
- 8 oz whipped cream cheese (cold)
- 2 tsp fresh lemon juice
- 1 tsp pure vanilla extract
- 3/4 cup powdered sugar (adjust to taste if needed)
- 8 ounces heavy cream (very cold)
Toppings
- Fresh berries (or topping of your choice)
Instructions
- Prepare the Crust: In a small bowl, combine graham cracker crumbs, light brown sugar, and melted salted butter. Mix thoroughly until the crumbs are evenly coated and saturated with butter. Set this mixture aside.
- Make the Cheesecake Mixture: In a large mixing bowl, blend the cold whipped cream cheese with fresh lemon juice, pure vanilla extract, and powdered sugar. Stir well until the mixture is smooth and creamy.
- Whip the Cream: In a separate bowl, or using a stand mixer bowl, whip the very cold heavy cream until stiff peaks form. This will give the mousse its light and fluffy texture.
- Combine Mixtures: Gently fold the whipped heavy cream into the cream cheese mixture, ensuring a smooth, airy, and well-combined mousse without deflating the whipped cream.
- Assemble Cups: Spoon 1 to 2 tablespoons of the graham cracker crust mixture into the bottom of each serving cup. Then, pipe or spoon the cheesecake mousse filling evenly into each cup over the crust layer.
- Add Toppings: Top each mousse cup with fresh berries or your preferred toppings to finish the dessert presentation.
- Serve or Chill: Serve the mousse cups immediately for a softer texture, or cover and refrigerate them for 3 to 5 hours if you prefer a firmer consistency.
Notes
- Use very cold heavy cream to achieve better volume when whipping.
- Adjust powdered sugar to your sweetness preference.
- Gently fold whipped cream to keep the mousse light and airy.
- You can customize toppings with nuts, chocolate shavings, or fruit compotes.
- For a glossier crust, you can press the crust mixture firmly at the bottom of the cups.
- Refrigeration time can be extended up to overnight for maximum firmness.
