Pasta

  • 12 ounces Linguine

Chicken and Seasoning

Instructions

  1. Cook the Pasta: In a large dutch oven, bring water to a boil and cook the linguine until al dente according to package instructions. Drain the pasta and reserve ½ cup of the pasta water for later use.
  2. Season the Chicken: While the pasta is cooking, place the sliced chicken in a medium bowl and season thoroughly with salt, black pepper, and Italian seasoning. Mix well to coat evenly.
  3. Sauté the Chicken: Return the empty pot to the stove over medium-high heat. Add the light olive oil and butter. Once melted and hot, add the seasoned chicken pieces. Cook for about 3-4 minutes, stirring occasionally until the chicken is browned and almost fully cooked. Remove the chicken to a plate and set aside.
  4. Cook Garlic and Tomato Paste: In the same pot, add the minced garlic and tomato paste. Sauté for about 30 seconds until fragrant to build the base of the sauce.
  5. Simmer the Sauce: Reduce the heat to low and stir in the San Marzano tomato sauce along with ¼ cup of the reserved pasta water and the cooked chicken. Bring the mixture to a gentle simmer and cook for 6-8 minutes to allow the flavors to meld and the chicken to finish cooking.
  6. Add Cream and Pasta: Stir in the heavy cream, then add the cooked linguine back into the pot. Toss everything together gently to combine and heat through, adding more reserved pasta water as necessary to achieve your desired sauce consistency.
