Orange Mixture
- 2 cups pure orange juice
- Zest from 1 orange (1-2 Tbsp.)
- 3/4 cup vegan Greek yogurt (unsweetened, plain)
- 1/4 cup pure maple syrup
- 1 Tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Zest the Orange: Using a fine grater or microplane zester, carefully grate the bright orange outer layer of one orange, avoiding the bitter white pith beneath. Collect 1 to 2 tablespoons of zest depending on desired intensity.
- Blend Ingredients: Add the orange juice, orange zest, vegan Greek yogurt, pure maple syrup, fresh lemon juice, vanilla extract, and pinch of salt into a blender. Blend on high for 10-15 seconds until the mixture is smooth and well combined. Adjust yogurt quantity if desired for creaminess or stronger orange flavor.
- Fill Popsicle Molds: Pour the blended mixture evenly into prepared popsicle molds, then carefully insert popsicle sticks into each mold.
- Freeze: Place the molds in the freezer and freeze for at least 6 hours, or until the popsicles are completely solid. The result will have a perfect balance between icy and creamy textures.
