Instructions
- Preheat Oven: Preheat your oven to 400°F (205°C) and position the rack in the top third of the oven to ensure even heat and perfect crust browning.
- Prepare Cod: Pat the cod pieces dry using paper towels to remove excess moisture, then generously season both sides with salt and pepper. Arrange the cod in a lightly greased 9×13 inch baking dish to prevent sticking.
- Mix Crust Ingredients: In a medium-sized bowl, combine the freshly grated parmesan cheese, panko breadcrumbs, Italian seasoning, garlic powder, and onion powder, mixing well to distribute the seasonings evenly.
- Apply Mayo and Crust: Spread about 1/2 tablespoon of mayonnaise evenly over the top of each cod piece. This will help the breadcrumb mixture adhere and keep the fish moist. Then sprinkle the prepared breadcrumb mixture evenly over each piece and gently pat it down to form a crust.
- Bake Cod: Place the baking dish in the oven and bake uncovered for 15 to 20 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). Check early to avoid overcooking, as oven temperatures and fish thickness can vary.
- Serve: Remove from the oven and, if desired, sprinkle with fresh chopped parsley and a squeeze of lemon juice for added brightness and flavor. Serve immediately and enjoy your crispy, tender baked cod.
Notes
- Using fresh cod fillets is best, but thawed frozen cod will also work.
- For a gluten-free version, substitute gluten-free panko breadcrumbs.
- Mayonnaise adds moisture and helps the crust stick — don’t substitute with less creamy spreads.
- Check the fish early after 15 minutes to avoid drying it out, especially if fillets are thin.
