Ingredients
Main Ingredients
- 1 15oz jar roasted Artichokes (or store-bought marinated, drained)
- 1 15oz can White Cannellini Beans (rinsed & drained)
- 1/2 Lemon, juiced and zested (approximately 1 Tbsp juice)
- 2 Tbsp Olive Oil
- 2 tsp fresh Thyme
- 2 tsp fresh Oregano
- 2 tsp fresh Basil
- 1/4 tsp Salt
- Black Pepper (to taste)
- 2 cloves garlic, minced
- 1/2 cup Trader Joe’s Quattro Formaggio or any Italian cheese blend
Instructions
- Combine Ingredients: Place the artichoke hearts, white cannellini beans, lemon juice and zest, olive oil, fresh thyme, fresh oregano, fresh basil, salt, black pepper, and minced garlic into a 7-cup food processor or blender. Pulse the mixture until the ingredients are well combined, ensuring a chunky but blended texture.
- Add Cheese and Blend: Add the Italian cheese blend to the food processor, then pulse again until the dip becomes smooth and creamy, incorporating the cheese evenly throughout.
- Chill the Dip: Transfer the prepared dip into a serving or storage bowl. Cover it tightly and refrigerate for up to two days before serving, allowing the flavors to meld.
- Serve: Serve the dip chilled alongside your choice of crackers, sliced vegetables, or toasted bread for dipping.
Notes
- Use marinated artichokes for a tangier flavor or plain roasted artichokes for a milder taste.
- The cheese blend can be substituted with Parmesan, Pecorino, or mozzarella depending on preference.
- For a smoother dip, blend longer but avoid over-processing to maintain some texture.
- Store leftovers in an airtight container in the refrigerator and consume within two days for best freshness.
