  • 1 15oz can White Cannellini Beans (rinsed & drained)
  • 1/2 Lemon, juiced and zested (approximately 1 Tbsp juice)
  • 2 Tbsp Olive Oil
  • 2 tsp fresh Thyme
  • 2 tsp fresh Oregano
  • 2 tsp fresh Basil
  • 1/4 tsp Salt
  • Black Pepper (to taste)
  • 2 cloves garlic, minced
  • 1/2 cup Trader Joe’s Quattro Formaggio or any Italian cheese blend

Instructions

  1. Combine Ingredients: Place the artichoke hearts, white cannellini beans, lemon juice and zest, olive oil, fresh thyme, fresh oregano, fresh basil, salt, black pepper, and minced garlic into a 7-cup food processor or blender. Pulse the mixture until the ingredients are well combined, ensuring a chunky but blended texture.
  2. Add Cheese and Blend: Add the Italian cheese blend to the food processor, then pulse again until the dip becomes smooth and creamy, incorporating the cheese evenly throughout.
  3. Chill the Dip: Transfer the prepared dip into a serving or storage bowl. Cover it tightly and refrigerate for up to two days before serving, allowing the flavors to meld.
  4. Serve: Serve the dip chilled alongside your choice of crackers, sliced vegetables, or toasted bread for dipping.
