Ingredients
Salad
- 1 (5-ounce) container salad greens of choice (spring mix works especially well)
- 2 peaches, sliced
- 1 avocado, sliced
- 1/2 cup pickled onions
- 1 cup grape tomatoes, halved
- 1 (8-ounce) container burrata, broken up
- Optional: 1/4 cup sliced almonds
- Optional for a full meal: 2-3 balsamic chicken breasts, sliced
Dressing
- 1/4 cup olive oil
- 3 tablespoons white peach balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon fine sea salt (plus more to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder or 1 clove garlic, finely grated or crushed
Instructions
- Arrange Greens: Arrange the salad greens on a large serving platter or in a large salad bowl, creating the base of your salad.
- Layer Salad: Top the greens with the sliced peaches, avocado, pickled onions, grape tomatoes, and torn pieces of burrata cheese. Tear the burrata slightly to allow the creamy center to mingle with the other ingredients.
- Add Almonds: If desired, sprinkle sliced almonds over the top for added texture and crunch.
- Whisk Dressing: In a small bowl or jar, combine the olive oil, white peach balsamic vinegar, Dijon mustard, sea salt, black pepper, and garlic (either powder or fresh). Whisk vigorously until the dressing is well emulsified.
- Dress Salad: Drizzle the dressing over the assembled salad just before serving. Toss gently if desired, then enjoy immediately for the freshest flavors.
Notes
- Use ripe but firm peaches for the best texture in the salad.
- White peach balsamic vinegar adds a unique fruity tang; if unavailable, substitute with regular balsamic vinegar mixed with a teaspoon of peach preserves.
- For added protein, include balsamic chicken breasts sliced over the salad.
- To make the salad vegan, omit the burrata or replace it with a plant-based cheese alternative.
- Prepare the dressing fresh before serving to maintain its bright flavor.
