Instructions
- Make the dressing: In a bowl, whisk together 2 teaspoons lemon juice, dijon mustard, honey, salt, and pepper. While whisking, slowly drizzle in 2 teaspoons olive oil until fully combined and smooth.
- Add herbs and onion: Stir in chopped fresh mint, cilantro, and minced red onion into the dressing. Mix until evenly combined, then set aside to let flavors meld.
- Prepare the peaches: Place sliced peaches in a large bowl. Drizzle with 2 teaspoons lemon juice and 2 teaspoons orange juice. Toss gently to coat, then arrange peaches evenly on a salad platter.
