Chocolate Coating
- 4 ounces chocolate (for melting and dipping)
Instructions
- Prepare the Nuts: Pulse JUST the peanuts in a food processor until they are broken down into fine crumbs.
- Make the Dough: Add the dates, peanut butter, and vanilla to the food processor and pulse again to form a soft, sticky dough. Add the tablespoon of water if the mixture becomes too sticky to process smoothly. Continue pulsing and scraping the mixture down until there are no large pieces left and the dough starts to stick together in one large ball.
- Form Balls: Roll small portions of the dough between your hands to create small balls. The dough may leave an oily residue on your hands but sticks well together. Place the formed balls on a plate or baking sheet lined with parchment or wax paper. Refrigerate until ready to dip.
- Melt Chocolate: Slowly melt the chocolate using a double boiler, a warm oven, or carefully in a microwave to avoid burning.
- Dip in Chocolate: Using two forks, dip each ball thoroughly into the melted chocolate, letting any excess drip off before placing them back on parchment paper to set. Refrigerate or freeze to help the chocolate harden and keep the treats cool.

- If the mixture feels too dry, add water very gradually, a teaspoon at a time.
- Use natural peanut butter with no added sugars for a healthier snack.
