Ingredients
Steak and Marinade
- 1 1/2 pound sliced steak (flank steak, sirloin, or top round)
- 1 tablespoon steak marinade
Vegetables and Cheese
- 1 large green bell pepper, seeds removed and sliced
- 1 large onion, sliced
- 8 slices provolone cheese
Other Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 large tortillas (regular, gluten free, or low carb)
Instructions
- Marinate the steak: Place the steak strips in a large bowl and toss them thoroughly with the steak marinade. Set aside to allow the flavors to penetrate the meat.
- Sauté the vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced green bell pepper and onion. Cook while stirring occasionally for about 5-6 minutes until the vegetables are tender. Remove and set aside.
- Sear the steak: In the same skillet, heat 1 tablespoon of butter along with 1 tablespoon of olive oil over medium-high heat. Add the marinated steak strips in a single layer. Let them cook undisturbed for 2-3 minutes to develop a nice sear.
- Finish cooking the steak: Stir the steak strips and cook for an additional 2-3 minutes until cooked through. Remove the steak from the skillet and set aside. Cook in batches if necessary to avoid overcrowding and steaming the steak.
- Warm the tortillas: Wipe the skillet clean and reduce heat to medium. If needed, spray with cooking oil. Heat each tortilla one at a time just until lightly browned and pliable for wrapping.
- Assemble the wraps: On each warmed tortilla, place two slices of provolone cheese, a portion of steak strips, sautéed peppers, and onions. Wrap the tortillas tightly. Slice the wraps if desired and serve immediately.

- Use skirt, flank, sirloin, or top round steak for best results.
- Marinating the steak enhances flavor and tenderness.
- Do not overcrowd the pan when searing steak to ensure proper browning.
- Warm tortillas just until pliable to prevent tearing when wrapping.
