Chicken Bites
- 2 large chicken breasts
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ¼ cup arrowroot powder
- 3 cups salted pretzel twists
- 2 eggs
Honey Mustard Egg Wash
- 1 tbsp honey
- 1 tbsp yellow mustard
Honey Mustard Dip
- 2 tbsp mayonnaise
- 2 tbsp honey
- 1 tbsp yellow mustard
- 1 tbsp dijon mustard

Instructions
- Prepare Pretzel Breadcrumbs: Place the pretzel twists in a food processor and pulse until they are mostly broken into breadcrumbs. Transfer the pretzel crumbs to a shallow bowl and set aside.
- Cut and Season Chicken: Cut the chicken breasts into small bite-sized pieces approximately 1 inch in size. Place the chicken pieces in a bowl and season generously with salt, pepper, and garlic powder. Add the arrowroot powder and toss to evenly coat all the chicken pieces.
- Make Egg Wash: In a separate bowl, whisk together the eggs, honey, and yellow mustard until well combined.
- Coat Chicken in Egg Wash and Pretzel Crumbs: Working in batches, add 5-6 pieces of chicken to the egg wash. Use a fork to flip and coat the chicken all over. Transfer the chicken to the pretzel crumb bowl and dredge each piece to fully coat with pretzel crumbs. Firmly press the crumbs onto the chicken with your hands to ensure they stick. Place the coated chicken pieces on a plate and repeat with remaining chicken.
- Preheat Air Fryer: Preheat your air fryer to 400°F (204°C) for 5 minutes.
- Air Fry Chicken: Place the coated chicken pieces in the air fryer basket in a single layer. Generously spray the chicken with cooking spray. Cook for 12-15 minutes, flipping the pieces halfway through and spraying again, until the chicken is golden brown and cooked through.
- Prepare Honey Mustard Dip: While the chicken cooks, mix together mayonnaise, honey, yellow mustard, and dijon mustard in a small bowl until smooth.
- Serve: Serve the crispy pretzel chicken bites hot with the honey mustard dip on the side for dipping or drizzle the sauce over the chicken.

- Make sure not to overcrowd the air fryer basket to ensure even cooking and crispiness.
- If you don’t have arrowroot powder, cornstarch can be used as a substitute to help the coating stick and crisp.
- For best texture, use salted pretzels for the coating to add flavor.

- Leftover chicken bites can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer for crispiness.
