Ingredients
Apple Mixture
- 1 large Honeycrisp apple, peeled, cored and diced (plus extra for topping, if desired)
- 1 tbsp maple syrup
- 1 tsp cinnamon
Oats Mixture
- 1 cup gluten free oats (One Degree Sprouted Rolled Oats recommended)
- 1 cup plain non-fat Greek yogurt
- 1/4 cup chia seeds
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 2 scoops vanilla protein powder (Clean Simple Eats brand suggested)
- 1 cup milk of choice (Fairlife 2% recommended)
Toppings
- More diced apples
- Chopped pecans
Instructions
- Caramelize Apples: Heat the diced apples, maple syrup, and 1 teaspoon of cinnamon in a small pot over medium heat. Stir often and cook for 8-10 minutes until the apples are softened and slightly caramelized.
- Mix Oats Ingredients: In a large bowl, combine the gluten free oats, Greek yogurt, chia seeds, 1 teaspoon cinnamon, nutmeg, vanilla protein powder, and milk. Mix thoroughly until everything is well incorporated.
- Assemble Jars: Divide half of the oat mixture evenly among four jars. Then layer 1/4 of the caramelized apples into each jar as a middle layer. Top with the remaining oat mixture to fill the jars.
- Refrigerate and Serve: Cover the jars and refrigerate the oats for at least 2 hours, or up to overnight to allow flavors to meld and oats to soften. Before serving, add more diced apples and sprinkle chopped pecans on top if desired for extra texture and flavor.
Notes
- Use Honeycrisp apples for best sweetness and texture but other apple varieties can also work.
- Maple syrup can be adjusted or substituted with honey or agave to taste.
- Overnight time can be extended up to 12 hours for softer oats.
- Choose your preferred milk type; dairy or plant-based varieties both work well.
- Protein powder brands vary; vanilla flavor enhances the apple pie taste.
- Chopped pecans add crunch and healthy fats but can be omitted or replaced with walnuts or almonds.
