Apple Filling
- 2 Tablespoons Vegan Butter
- 1 Cup Granny Smith Apple (about 1 apple, peeled and diced into ½ inch cubes)
- ¼ Cup Light Brown Sugar
- ½ teaspoon Lemon Juice
- ½ teaspoon Cinnamon
- ¼ teaspoon Salt
- ⅛ teaspoon Nutmeg
- 2 teaspoons Cornstarch
- 2 teaspoons Cool Water
Puff Pastry
- 9 ounces Gluten Free Puff Pastry
- Egg Wash (1 egg + 1 tablespoon water + ⅛ teaspoon salt beaten)
Icing
- ½ Cup Powdered Sugar (sifted)
- 1 ½ teaspoons Plant Based Cream
- ½ teaspoon Vanilla
Instructions
- Cook the Apple Filling: Add the vegan butter to a medium skillet or saucepan over medium heat. Once melted, stir in the diced apples, brown sugar, lemon juice, cinnamon, salt, and nutmeg. Cook, stirring occasionally, until the apples are fork tender, about 5-10 minutes.
- Thicken the Filling: Combine cornstarch and cool water to create a slurry. Stir this into the cooked apples and continue cooking and stirring until the sauce thickens slightly. Remove from heat and allow the filling to cool to room temperature, approximately 30 minutes.
- Prepare the Puff Pastry: Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper. Roll out the gluten-free puff pastry to desired thickness and cut into either 4 large squares or 6 smaller squares depending on preferred size.
- Assemble the Turnovers: Place puff pastry squares on the prepared baking sheet. Spoon about 2 tablespoons of apple filling onto each square, slightly off-center, leaving edges clear for sealing. Fold each square over to form a triangle and press edges firmly with a fork to seal.
- Apply Egg Wash and Bake: Carefully brush the tops of each turnover with egg wash, avoiding the edges to ensure proper puffing. Cut a small slit on top of each to allow steam to escape. Bake in the preheated oven for 15-20 minutes or until golden brown and flaky.
- Cool the Turnovers: Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack to cool further.
- Make the Icing: In a small bowl, combine powdered sugar, plant-based cream, and vanilla extract. Mix until smooth.
- Finish and Serve: Drizzle the icing over the slightly cooled turnovers. Allow icing to harden for a few minutes or serve immediately while warm.
