Instructions
- Preheat the Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with oil, butter, or cooking spray to prevent sticking, then set it aside.
- Mix Wet Ingredients: In a medium-sized mixing bowl, combine the pumpkin puree, milk, eggs, almond butter, maple syrup, and vanilla extract. Stir thoroughly until well blended and smooth.
- Add Dry Ingredients: To the wet mixture, add the rolled oats, dried cranberries, pumpkin pie spice, cinnamon, ground ginger, and salt. Mix everything together evenly. Reserve a small amount of dried cranberries for topping later if desired.
- Transfer to Baking Dish: Pour the combined oatmeal batter into the prepared baking dish, spreading it out evenly. Sprinkle the remaining dried cranberries and chopped pecans over the top for added texture and flavor.
- Bake the Oatmeal: Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the oatmeal is firm and a toothpick inserted into the center comes out clean. This ensures the oatmeal is fully cooked and set.
