Batter and Icing
- 2 Tablespoons salted butter (melted and cooled)
- 1 cup cottage cheese
- 1/4 cup maple syrup
- 1/2 cup pumpkin purée
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
Cinnamon Sugar Filling
- 2 Tablespoons butter (melted)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
Instructions
- Melt Butter: Melt 2 tablespoons of salted butter and set it aside to cool for the batter preparation.
- Blend Cottage Cheese and Maple Syrup: In a large blending cup, blend 1 cup of cottage cheese with 1/4 cup maple syrup until smooth. This method works better with a small blending cup than a standard blender.
- Reserve Icing Mixture: Remove 1/3 cup of the blended cottage cheese mixture and set it aside for use as the icing later.
- Blend Wet Ingredients: To the remaining blended cottage cheese and maple syrup, add 1/2 cup pumpkin purée, 3 eggs, 1 teaspoon vanilla extract, and the cooled melted butter. Lightly pulse the mixture until combined but not overly blended.
- Whisk Dry Ingredients: In a large mixing bowl, whisk together 1 1/4 cups all-purpose flour, 2 teaspoons baking powder, 1 1/2 teaspoons cinnamon, and 1 teaspoon pumpkin pie spice until evenly combined.
- Mix Batter: Add the blended wet ingredients to the dry ingredients and gently mix until just combined. Some lumps in the batter are fine; do not overmix.
- Prepare Cinnamon Sugar Filling: Melt 2 tablespoons butter in a small bowl, then stir in 1/4 cup brown sugar and 1 teaspoon ground cinnamon until well combined.
- Heat Skillet: Warm a nonstick skillet over medium heat to prepare for cooking the pancakes.
- Cook Pancakes with Swirl: Pour about 1/4 cup of pancake batter into the skillet for each pancake. Gently swirl a spoonful of the cinnamon sugar filling over each pancake surface. Cover the pan with a lid and cook for 3-4 minutes, allowing the batter to set and the filling to meld in.
- Flip Pancakes: Remove the lid carefully and flip each pancake. Cook for an additional 2 minutes until fully cooked and golden brown on both sides.
- Serve with Icing: Drizzle the reserved cottage cheese icing over the warm pancakes and enjoy immediately.

- Use a nonstick pan and medium heat to prevent burning and ensure even cooking.
- Do not overmix the batter to keep pancakes light and fluffy.
- Set aside some blended cottage cheese mixture before adding wet ingredients for a smooth icing drizzle.
- The cinnamon sugar filling gives the pancakes a signature swirl similar to cinnamon rolls.
