Ingredients
Main Ingredients
- 2 tablespoons virgin or unrefined coconut oil
- 2 teaspoons cumin seeds
- 2 inch piece of ginger, sliced
- 2 large cloves of garlic
- 1 cup millet, rinsed
- 2 teaspoons ground coriander
- 2 teaspoons kosher salt, add more to taste
- 4 cups vegetable broth
- 3 cups water
- 1 (15-ounce) can of pumpkin puree
To Serve (Optional)
- Chili oil
- Chili flakes
- Sliced scallions
Instructions
- Toast Spices and Sauté Aromatics: Heat the coconut oil in a large pot over medium to medium-low heat. Add the cumin seeds and toast for about 1 minute, stirring frequently to release their aroma. Then add the sliced ginger and garlic cloves and sauté for another minute until fragrant.
- Add Millet and Spices: Transfer the rinsed millet into the pot and stir to coat it evenly with the oil and spices. Add the ground coriander and kosher salt, mixing everything together thoroughly.
- Combine Liquids and Bring to Boil: Pour in the vegetable broth and water, then cover the pot with a lid. Increase the heat to medium-high and bring the mixture to a rolling boil.
- Simmer With Pumpkin Puree: Once boiling, uncover the pot and reduce the heat to low. Stir in the pumpkin puree, cover the pot again, and allow the porridge to simmer gently for 15 minutes.
- Stir and Continue Cooking: Stir the porridge to prevent it from sticking and scorching the bottom. Cover and cook for an additional 15 minutes over low heat.
- Adjust Consistency and Cool: The porridge may appear runny initially. Stir well and if it remains watery, cook uncovered on high heat for another 5 minutes. Then remove from heat and let the porridge cool uncovered for 10 minutes to allow it to thicken.
- Serve: Spoon the warm pumpkin millet porridge into bowls. Optionally, garnish with chili oil, chili flakes, and sliced scallions to add heat and freshness to the dish.
Notes
- Rinse the millet thoroughly before cooking to remove any bitterness.
- You can adjust the salt according to taste preference.
- Using virgin or unrefined coconut oil adds a subtle coconut flavor that complements the spices.
- Simmering time is important to ensure the millet is fully cooked and porridge achieves the right creamy texture.
- The porridge thickens as it cools, so resist the urge to overcook initially.
- To make it vegan, ensure your vegetable broth doesn’t contain animal products.
