  • Total Time: 50 minutes
  • Yield: 40 servings

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves

Wet Ingredients

  • 4 large eggs (lightly beaten)
  • 1 can pure pumpkin (15 oz, not pumpkin pie filling)
  • 1 cup vegetable oil
  • 1/2 cup butter (softened)
  • 1/2 cup Nutella
  • 3 tablespoons milk

Frosting

  • 2 cups powdered sugar

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a 15x10x1-inch baking pan with parchment paper to prevent sticking, then set it aside.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, baking soda, and ground cloves until well combined.
  3. Add wet ingredients: Add the lightly beaten eggs, pure pumpkin, and vegetable oil to the dry mixture. Mix on medium speed until everything is fully combined and smooth.
  4. Pour batter into pan: Transfer the batter evenly into the prepared pan, spreading it out with a spatula for uniform thickness.
  5. Bake the bars: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the bars: Remove the pan from the oven and allow the pumpkin bars to cool completely on a wire rack before frosting.
  7. Prepare the Nutella frosting: In a mixing bowl, beat together the softened butter, Nutella, and milk until light and fluffy. Gradually add the powdered sugar, continuing to beat until the frosting is smooth and spreadable.
  8. Frost and serve: Spread or pipe the Nutella frosting evenly over the cooled pumpkin bars. Cut into squares and serve fresh for the best taste.

Notes

  • Use pure pumpkin (canned pumpkin) and not pumpkin pie filling to avoid added spices and sugars.
  • Ensure the pumpkin bars are completely cool before frosting to prevent melting the frosting.
  • You can substitute Nutella with any chocolate-hazelnut spread or chocolate frosting for a different flavor.
  • Store pumpkin bars in an airtight container in the refrigerator for up to 5 days.
