Fruit
- 1 medium fresh pineapple
- 6 cups cubed seedless watermelon
- 1 pound strawberries
- 1 pint blueberries
- 1 pint blackberries

- 1/3 cup lemon juice (about 2 lemons)
Instructions
- Prepare Pineapple: Remove the peel and core from 1 medium fresh pineapple. Cut it into 1/2-inch thick strips and use a small star-shaped cookie cutter to cut out star shapes. If you don’t have a star-shaped cutter, dice the pineapple into bite-sized cubes.
- Prepare Other Fruits: Cube 6 cups of seedless watermelon and hull and slice 1 pound of strawberries.
- Combine Fruits: Add the prepared pineapple stars or cubes, watermelon, and strawberries to a large serving bowl along with 1 pint of blueberries, 1 pint of blackberries, 1/3 cup of crumbled feta cheese, and 1/4 cup of roughly chopped fresh mint.
- Make Dressing: In a small bowl, microwave 3 tablespoons of honey for 10 to 15 seconds until liquified. Whisk in 1/3 cup of lemon juice to create the honey-lemon dressing.
- Toss Salad: Pour the honey-lemon dressing over the fruit mixture in the serving bowl. Stir gently to combine all ingredients evenly.
- Chill: Cover the bowl with a lid or plastic wrap and refrigerate until ready to serve, allowing flavors to meld.
