A refreshing and colorful Red, White, and Blue Fruit Salad featuring a mix of fresh pineapple stars, watermelon, strawberries, blueberries, and blackberries, accented with crumbled feta, fresh mint, and a tangy honey-lemon dressing. Perfect for summer gatherings and patriotic celebrations.

  • Total Time: 20 minutes
  • Yield: 8 servings

Ingredients

Fruit

  • 1 medium fresh pineapple
  • 6 cups cubed seedless watermelon
  • 1 pound strawberries
  • 1 pint blueberries
  • 1 pint blackberries

Additional Ingredients

  • 1/3 cup crumbled feta cheese
  • 1/4 cup roughly chopped fresh mint (about 8 leaves)
  • 3 tablespoons honey
  • 1/3 cup lemon juice (about 2 lemons)

Instructions

  1. Prepare Pineapple: Remove the peel and core from 1 medium fresh pineapple. Cut it into 1/2-inch thick strips and use a small star-shaped cookie cutter to cut out star shapes. If you don’t have a star-shaped cutter, dice the pineapple into bite-sized cubes.
  2. Prepare Other Fruits: Cube 6 cups of seedless watermelon and hull and slice 1 pound of strawberries.
  3. Combine Fruits: Add the prepared pineapple stars or cubes, watermelon, and strawberries to a large serving bowl along with 1 pint of blueberries, 1 pint of blackberries, 1/3 cup of crumbled feta cheese, and 1/4 cup of roughly chopped fresh mint.
  4. Make Dressing: In a small bowl, microwave 3 tablespoons of honey for 10 to 15 seconds until liquified. Whisk in 1/3 cup of lemon juice to create the honey-lemon dressing.
  5. Toss Salad: Pour the honey-lemon dressing over the fruit mixture in the serving bowl. Stir gently to combine all ingredients evenly.
  6. Chill: Cover the bowl with a lid or plastic wrap and refrigerate until ready to serve, allowing flavors to meld.

Notes

  • Use a star-shaped cookie cutter for a festive presentation, or dice pineapple if unavailable.
  • Microwaving honey makes it easier to mix with lemon juice.
  • Refrigerating the salad enhances flavor blending and keeps fruits fresh.
  • Feta cheese adds a savory contrast, but can be omitted for a dairy-free version.
  • Use fresh, ripe fruits for best taste and texture.
