Cake Batter
- 15 oz box white cake mix
- 3.4 oz box instant pudding mix (vanilla, white chocolate, or cheesecake flavor)
- 4 large egg whites
- 3/4 cup vegetable oil
- 8 oz Sprite (or another lemon-lime soda)
- Red food coloring
- Blue food coloring
Icing
- 1 1/2 cups powdered sugar
- 2-4 tablespoons Sprite
- Red, white, and blue sprinkles for topping
Instructions
- Preheat and prepare the pan: Preheat your oven to 325°F (163°C). Grease a 10-cup bundt pan thoroughly with nonstick spray, then lightly dust it with flour to prevent sticking.
- Mix dry ingredients and egg whites: In a large bowl or a stand mixer fitted with a whisk attachment, add the white cake mix, instant pudding mix, and egg whites. Whisk them together until well combined.
- Add the oil: Stir in the vegetable oil until the batter is uniformly mixed.
- Incorporate the soda: Slowly pour in the Sprite while mixing on low speed or stirring gently until the batter becomes smooth and well blended.
- Divide and color the batter: Split the batter evenly into three separate bowls. Add red food coloring to one bowl, blue food coloring to another, and leave the third plain white.
- Layer the batter in the pan: Using a cookie scoop or tablespoon, spoon the colored batters alternately into the prepared bundt pan. Try to place different colors next to each other for a vibrant layered effect.
- Bake the cake: Place the bundt pan in the preheated oven. Bake for 45-50 minutes or until a toothpick inserted into the thickest part of the cake comes out clean.
- Cool the cake: Remove the bundt pan from the oven and allow the cake to cool in the pan for 20 minutes. Then carefully invert the cake onto a cooling rack, plate, or cake pan and let it cool completely for about 40 minutes before adding icing.
- Prepare the icing: Whisk together the powdered sugar and 2 tablespoons of Sprite in a bowl. Adjust the consistency by adding more Sprite or powdered sugar as needed until thick but pourable.
- Ice the cake: Pour the icing evenly over the cooled cake, allowing it to drip over the sides.
- Add sprinkles: Decorate the iced cake with red, white, and blue sprinkles immediately for a festive touch.
- Set and serve: Let the icing set before slicing the cake. Serve and enjoy your patriotic dessert.
Notes
- For the best color results, use gel-based food coloring that won’t thin the batter.
- If you prefer, substitute Sprite with any lemon-lime soda or sparkling water for a lighter flavor.
- Be careful while inverting the cake to avoid cracking the delicate layers.
- Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 4 days.
