Ingredients
Rhubarb Syrup
- 1 lb fresh rhubarb, trimmed and sliced
- 1/2 cup sugar, or your favorite sugar substitute (adjust according to package instructions)
- 3 cups water

Instructions
- Prepare the Rhubarb Mixture: Place the sliced rhubarb and sugar into a non-reactive pot, such as stainless steel or enamel. Pour in the water and stir gently to combine all the ingredients evenly.
- Cook the Rhubarb: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and simmer gently for about 8 minutes, allowing the rhubarb to soften completely and infuse the water with its flavor and color.
- Cool and Strain: Remove the pot from heat and let the rhubarb mixture cool to room temperature. Then, strain the liquid through a fine mesh strainer, jelly bag, or cheesecloth to separate the syrup from the solids. Gently press to extract as much juice as possible for maximum flavor.
- Refrigerate Syrup: Transfer the strained rhubarb syrup into a clean container and refrigerate until chilled and ready to use. This syrup can be stored for several days in the refrigerator.
- Make Rhubarb Soda: To serve, pour about 1/3 cup of chilled rhubarb syrup into a glass. Top off with 2/3 cup of cold sparkling water. Add ice cubes if desired and stir gently. Enjoy your refreshing homemade rhubarb soda!
Notes
- You can substitute sugar with honey, agave nectar, or a sugar substitute to adjust sweetness to your preference.
- Adjust the amount of sparkling water to syrup ratio to make the soda more or less sweet according to your taste.
- The rhubarb syrup can be used as a base for cocktails or mixed with still water for a different beverage experience.
