This refreshing Rhubarb Soda recipe transforms fresh rhubarb into a vibrant, homemade syrup that is combined with sparkling water to create a lightly sweetened, fizzy drink perfect for warm weather or any time you want a unique, fruity soda without artificial ingredients.

  • Total Time: 18 minutes
  • Yield: 6 servings

Ingredients

Rhubarb Syrup

  • 1 lb fresh rhubarb, trimmed and sliced
  • 1/2 cup sugar, or your favorite sugar substitute (adjust according to package instructions)
  • 3 cups water

To Serve

  • Sparkling water
  • Ice cubes (optional)

Instructions

  1. Prepare the Rhubarb Mixture: Place the sliced rhubarb and sugar into a non-reactive pot, such as stainless steel or enamel. Pour in the water and stir gently to combine all the ingredients evenly.
  2. Cook the Rhubarb: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and simmer gently for about 8 minutes, allowing the rhubarb to soften completely and infuse the water with its flavor and color.
  3. Cool and Strain: Remove the pot from heat and let the rhubarb mixture cool to room temperature. Then, strain the liquid through a fine mesh strainer, jelly bag, or cheesecloth to separate the syrup from the solids. Gently press to extract as much juice as possible for maximum flavor.
  4. Refrigerate Syrup: Transfer the strained rhubarb syrup into a clean container and refrigerate until chilled and ready to use. This syrup can be stored for several days in the refrigerator.
  5. Make Rhubarb Soda: To serve, pour about 1/3 cup of chilled rhubarb syrup into a glass. Top off with 2/3 cup of cold sparkling water. Add ice cubes if desired and stir gently. Enjoy your refreshing homemade rhubarb soda!

Notes

  • You can substitute sugar with honey, agave nectar, or a sugar substitute to adjust sweetness to your preference.
  • Adjust the amount of sparkling water to syrup ratio to make the soda more or less sweet according to your taste.
  • The rhubarb syrup can be used as a base for cocktails or mixed with still water for a different beverage experience.
  • Store the rhubarb syrup in an airtight container in the refrigerator for up to 5–7 days.
  • Use fresh, firm rhubarb stalks for the best flavor and vibrant color.
