Chicken Mixture
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup sour cream
- 4 ounces cream cheese (softened)
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 (10 ounce) bag frozen mixed vegetables
- 3 cups cooked and chopped chicken breast (about 1½ pounds)
Topping
- 1 sleeve Ritz Crackers (crushed, about 1½ cups)
- ½ cup butter (melted)
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon fresh chopped parsley (optional for garnish)
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9″x13″ baking dish with butter or cooking spray to prevent sticking. Set aside.
- Mix creamy base: In a large bowl, combine the cream of chicken soup, sour cream, softened cream cheese, onion powder, garlic powder, and black pepper. Stir until the mixture is smooth and well blended.
- Add vegetables and chicken: Add the frozen mixed vegetables and the cooked, chopped chicken breast to the creamy mixture. Stir until everything is evenly incorporated.
- Transfer mixture to baking dish: Pour the chicken and vegetable mixture into the prepared baking dish, spreading it out evenly.
- Prepare topping: In a separate medium bowl, mix the crushed Ritz crackers with melted butter and grated Parmesan cheese. Combine thoroughly to coat the cracker crumbs.
- Add topping and garnish: Sprinkle the cracker crumb mixture evenly over the chicken mixture in the baking dish. Optionally, sprinkle fresh chopped parsley on top for color and freshness.
- Bake the casserole: Place the dish uncovered into the preheated oven. Bake for 30 to 35 minutes, or until the casserole is heated through and the topping is golden and crispy.
Notes
- You can substitute mixed vegetables with your favorite veggies, such as broccoli or peas.
- Use cooked rotisserie chicken to save time.
- Allow the casserole to rest for 5 minutes before serving to help it set.
- For a lower-fat option, use reduced-fat sour cream and cream cheese.
