A creamy, comforting Ritz Cracker Chicken Casserole that combines tender chicken, mixed vegetables, and a cheesy Ritz cracker topping baked to golden perfection. This easy-to-make casserole is perfect for a family dinner or potluck, delivering rich flavor and a satisfying crunch in every bite.

  • Total Time: 40-45 minutes
  • Yield: 8 servings

Ingredients

Chicken Mixture

  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 (10 ounce) bag frozen mixed vegetables
  • 3 cups cooked and chopped chicken breast (about pounds)

Topping

  • 1 sleeve Ritz Crackers (crushed, about 1½ cups)
  • ½ cup butter (melted)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh chopped parsley (optional for garnish)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9″x13″ baking dish with butter or cooking spray to prevent sticking. Set aside.
  2. Mix creamy base: In a large bowl, combine the cream of chicken soup, sour cream, softened cream cheese, onion powder, garlic powder, and black pepper. Stir until the mixture is smooth and well blended.
  3. Add vegetables and chicken: Add the frozen mixed vegetables and the cooked, chopped chicken breast to the creamy mixture. Stir until everything is evenly incorporated.
  4. Transfer mixture to baking dish: Pour the chicken and vegetable mixture into the prepared baking dish, spreading it out evenly.
  5. Prepare topping: In a separate medium bowl, mix the crushed Ritz crackers with melted butter and grated Parmesan cheese. Combine thoroughly to coat the cracker crumbs.
  6. Add topping and garnish: Sprinkle the cracker crumb mixture evenly over the chicken mixture in the baking dish. Optionally, sprinkle fresh chopped parsley on top for color and freshness.
  7. Bake the casserole: Place the dish uncovered into the preheated oven. Bake for 30 to 35 minutes, or until the casserole is heated through and the topping is golden and crispy.

Notes

  • You can substitute mixed vegetables with your favorite veggies, such as broccoli or peas.
  • Use cooked rotisserie chicken to save time.
  • Allow the casserole to rest for 5 minutes before serving to help it set.
  • For a lower-fat option, use reduced-fat sour cream and cream cheese.
  • The parsley garnish is optional but adds freshness and color.
