Ingredients
Vegetables
- 6 cups sweet potatoes, peeled and cubed (about 2 medium-large sweet potatoes)
- 4 cups beetroot, peeled and cubed (about 4 medium-sized beets)
Seasoning & Oil
- 1/4 cup olive oil
- 2 tablespoons honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Toppings
- 1/3 cup crumbled goat cheese
- Approximately 1 tablespoon fresh thyme, for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (205°C). Line an extra-large baking sheet with parchment paper. If you don’t have a large baking sheet, use two to ensure all veggies fit in a single layer without overlapping for even roasting.
- Prepare Vegetables: Peel the sweet potatoes and beets. Cut sweet potatoes into approximately 1-inch cubes. Cut beets slightly smaller, about 1/2 to 3/4 inch thick, so they cook evenly with the sweet potatoes.
- Toss Veggies with Seasoning: Place cubed sweet potatoes and beets into a large mixing bowl. Add olive oil, honey, garlic powder, dried thyme, salt, and pepper. Toss everything together until all pieces are evenly coated with the mixture.
- Arrange on Baking Sheet: Spread the coated vegetables in a single layer on the prepared baking sheet, leaving a little space between pieces to ensure proper roasting.
- Roast Vegetables: Place the baking sheet in the preheated oven and roast for about 45 minutes. Halfway through cooking (around 22 minutes), toss the veggies gently to promote even browning and cooking.
- Add Goat Cheese and Garnish: Once the vegetables are tender and caramelized, remove from oven. Transfer to a serving dish and sprinkle crumbled goat cheese over the top. Garnish with fresh thyme before serving for an added burst of flavor and freshness.
Notes
- Cutting the beets slightly smaller helps them cook at the same rate as the sweet potatoes.
- Using parchment paper makes cleanup easier and prevents sticking.
- Feel free to substitute honey with maple syrup for a vegan option, although this will change the diet classification.
- Try adding a splash of balsamic vinegar before roasting for additional depth of flavor.
- Leftovers can be refrigerated and reheated; they also make a great addition to salads or grain bowls.
