A simple and delicious roasted broccoli recipe featuring tender florets with a crisp edge, enhanced by garlic, Parmesan cheese, and an optional lemon zest and juice finish. This healthy side dish is perfect for a quick and flavorful addition to any meal.

  • Total Time: 25-29 minutes
  • Yield: 4 servings

Ingredients

Broccoli

  • 7-1/2 packed cups broccoli florets

Seasonings and Oil

  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Toppings

  • 2 tablespoons freshly grated Parmesan cheese
  • 1 lemon (optional, for zest and juice)

Instructions

  1. Prepare: Gather all ingredients and preheat the oven to 425°F. Prepare a large sheet pan or two smaller sheet pans for roasting.
  2. Preheat Oven: Set your oven to 425°F and get an extra-large (15×21 inch) sheet pan, or alternatively two smaller (11×17 inch) sheet pans ready.
  3. Prepare Veggies: Cut the broccoli into even-sized florets to ensure even cooking.
  4. Season the Broccoli: Place the broccoli florets on the prepared sheet pan(s). Drizzle with olive oil, then sprinkle salt, pepper, and garlic powder evenly. Toss the broccoli with your hands to coat well in the oil and seasonings. Spread the florets in a single layer with the cut sides touching the pan to promote roasting and crispiness.
  5. Roast: Bake the broccoli in the preheated oven for 15 to 19 minutes until the florets are crisp-tender and have light charring on the edges. This brings out a deep roasted flavor and texture.
  6. Add Parmesan and Lemon: Remove the broccoli from the oven, sprinkle freshly grated Parmesan cheese over it and let it slightly melt. If using, add 1/2 teaspoon lemon zest and 1 tablespoon lemon juice, then toss gently to distribute the flavors.
  7. Serve: Serve the roasted broccoli immediately as a flavorful and healthy side dish.

Notes

  • Use packed cups of broccoli florets for accurate measurement.
  • Freshly grated Parmesan melts better and provides more flavor than pre-grated varieties.
  • Use a large sheet pan or two smaller pans to allow enough space for even roasting; overcrowding will cause steaming instead of roasting.
  • Cut broccoli into uniform size florets to ensure even cooking.
  • For extra flavor, serve with fresh lemon zest and juice, but this is optional.
