A simple and flavorful recipe for roasted chickpeas seasoned with garlic powder, cayenne pepper, cumin, and salt, perfect as a crunchy, healthy snack or salad topping. These roasted chickpeas are cooked in the oven until crispy, delivering a satisfying texture and a burst of savory and mildly spicy flavors.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Chickpeas

  • 1 can Chickpeas (15.5 oz), drained and rinsed

Seasonings

  • 1 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Cumin
  • 1/4 tsp Salt

Oils

  • 1 tbsp Olive Oil (for coating chickpeas)
  • 2 tbsp Olive Oil (for pan)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for roasting the chickpeas.
  2. Heat the pan: Add 2 tablespoons of olive oil to a large oven-safe pan and place it in the oven for around 10 minutes until the oil is hot and the pan is warmed through.
  3. Prepare chickpeas: In a mixing bowl, toss the drained chickpeas with 1 tablespoon olive oil and all the seasonings (garlic powder, cayenne pepper, cumin, salt) until evenly coated.
  4. Roast chickpeas: Carefully remove the hot pan from the oven and spread the seasoned chickpeas evenly in it. Return the pan to the oven and roast the chickpeas for 25 minutes, allowing them to become crisp and golden.
  5. Serve: Remove the chickpeas from the oven and let them cool slightly before enjoying as a snack or adding to your favorite dishes.

Notes

  • For extra crispiness, spread chickpeas in a single layer without overcrowding the pan.
  • You can adjust the cayenne pepper to suit your preferred spice level.
  • Leftover roasted chickpeas can be stored in an airtight container for up to 3 days but may lose some crunch over time.
  • Make sure to drain and dry the chickpeas well before roasting to enhance crispiness.
