This vibrant Roasted Peach Tomatillo Salsa combines the tangy zest of tomatillos with the sweet juiciness of peaches, accented by roasted jalapeños and garlic for a spicy kick. Perfect for serving with chips, tacos, or grilled meats, this fresh salsa is quick to prepare and bursting with bold flavors.

  • Total Time: 27 minutes
  • Yield: 6 servings

Ingredients

Produce

  • 6-8 tomatillos, cleaned and sliced in half
  • 1 large peach, not too ripe, sliced into 8 slices
  • 2 garlic cloves, peeled
  • ½ onion, thinly sliced into long wedges
  • 2 small jalapeños, seeds removed and halved
  • 1-2 tablespoons cilantro leaves, roughly chopped
  • Juice of ½ lime (about 1 tablespoon, optional)

Pantry

  • 1 tablespoon olive oil, plus more for brushing baking dish
  • ¼ teaspoon salt or more to taste

Instructions

  1. Preheat the broiler: Set your oven to the broil setting and lightly brush a large baking dish with olive oil to prevent sticking.
  2. Prepare the ingredients: Rinse the tomatillos thoroughly to remove the slime and cut each in half. Slice the onion half into long thin wedges, separate them, and remove seeds from the jalapeños, slicing them in half. Slice the peach into 8 slices, discarding the pit.
  3. Arrange and oil: Lay out the tomatillos, jalapeños, onion wedges, peach slices, and garlic cloves on the prepared baking dish. Drizzle everything evenly with olive oil to enhance roasting.
  4. Broil the veggies and fruit: Place the baking dish under the broiler and roast for 7-8 minutes until the tomatillos and peppers start charring, but avoid burning. Begin checking at 6 minutes as broilers can vary. Remove and let cool for 10-15 minutes until safe to handle.
  5. Chop and mix: Roughly dice the roasted ingredients into about ½ inch pieces, mincing garlic finely or pressing it. Combine all chopped ingredients in a bowl, avoiding excess liquid from the tomatillos to prevent watery salsa. Add chopped cilantro, salt to taste, and stir well. Mix in lime juice if desired for added tanginess.

Notes

  • Choose a peach that is firm enough to slice cleanly to avoid mushy pieces in the salsa.
  • Adjust the amount of jalapeño according to your heat preference; removing seeds reduces spiciness.
  • Keep an eye on the broiler as ingredients can burn quickly; broiler temperatures vary.
  • This salsa stores well in an airtight container in the refrigerator for up to 3 days.
  • Perfect as a topping for tacos, grilled chicken, fish, or served with tortilla chips.
